Since November 2018 we are offering our customers a 100% vegan menu. It took a lot of work and a pinch of craziness ;)
There was a young couple (let’s call them Anabell and Andovie) which called us, to inform us about their decision to go vegan. Thus they were unfortunately not able anymore to come to our restaurant – as much as they liked it ever since we were opening our restaurant in Green Lake City. We were puzzled. Why would you go vegan and cut out such a large variety of food such as meat, fish and seafood from your daily diet ? And we were sad, because we liked these young folks very much and we already started missing them. Thus we decided to spend some time to find out what it is all about this “vegan thing”. And we told Anabell and Andovie: “we will bring vegan on the menu !”
According to the Vegan Society (www.vegansociety.com), Veganism is a way of living which seeks to exclude, as far as is possible and practicable, all forms of exploitation of, and cruelty to, animals for food, clothing or any other purpose.
A way of living ? We never intented to change our lifestyle when we started this journey, but there are many ways to embrace vegan living...
One thing all vegans have in common is a plant-based diet avoiding all animal foods such as meat (including fish, shellfish and insects), dairy, eggs and honey.
We had our faire share of experienc with vegetarian food already (and we actually like it a lot!), but to go vegan on the menu would require us to raise the bar substantially.
What sounded in the first place like a lot of restrictions around a “normal” diet, we decided to take up as a challenge: could we come up with an artisanal, tasty and exploitation-free menu ?
We started experimenting in our kitchen: how to make a creamy pasta, not using cream ? How to make jummy desserts, not using egg or honey ? How to make an alternative to cheese ?
As you can see, at the beginning of our vegan journey we - were driven by the question: how can we replace or substitute existing ingredients to make them taste the way we are used to them – in a “meat driven” world.
But we asked ourself: should one not embrace the ingredients at hand and celebrate the cuisine we created this way ? Once we concluded that this is the way going forward everyting fall into place.
Don’t think in restrictions, don’t worry about replacements and substitutes: there are literally millions of plants which we have not eaten yet and once you start trying you will find out, that your meat diet is actually restricting you. Don’t narrow you focus, widen your horizon. And you will find our that vegan food is actually an enrichment of your diet and even better: a delicious one !

It sounds like a line, but it’s truly been an adventure, and we are grateful for the trust and love that we have been given along the way.
